I have the complete set of manuals. I have no affiliation with the site, but I certainly appreciated them sharing. By 3 cup I mean three cups of wheat usually white flour, and maybe another cup of grains or non-white flour. I think the front of the book had a lot of yellow on it?? So, the possibility of finding an English recipe book for your machine is probably very low. Hope it is the manual you needed.
Does anyone know where I can call for repairs?? Now it turns great, and the machine was working beautifully — until yesterday. It automatically sets to medium but I think maybe if you were to set it to light, the crust would be a bit softer. The Hitachi site was not helpful — the only section on bread makers is in Japanese. I pretty much accept that my Hitachi will tear them up. When I set it right, and put it all back together, it started up perfectly. I have no idea what the settings are.

You can deduce what is happening based on the information you glean from all the different manuals you read.
Do you know how to adjust the crust setting? I brought it home and used the instructions on the sticker for a large loaf. Or would anyone just like to have the French one? I will be happy to scan the book s for you and send them to you. I removed the screws and was able to get control board out. The only problem is that its manual is missing.
